The consistency of ice cream is adversely affected by even slight temperature changes in the freezer. To counteract this problem, manufacturers add stabilizers to ice cream. Unfortunately, stabilizers, though inexpensive, adversely affect flavor. Stabilizers are less needed if storage temperatures are very low.
